If you're looking for a delicious and hearty soup to warm you up this winter, look no further than wonton soup. This classic Chinese dish is made with pork or shrimp dumplings called wontons, and it's usually served with a clear broth and some vegetables. Wonton soup can be found at most Chinese restaurants in Montreal, and it's a great way to try some of the region's best cuisine.

1. In a large pot or Dutch oven, bring the chicken stock to a boil. Add the onion, garlic, ginger and shiitake mushrooms. Simmer for 30 minutes. Strain the stock and discard the solids. Return the stock to the pot. Add the soy sauce, sesame oil and wonton wrappers. Cook for 3-5 minutes until the wrappers are soft. Season with salt if needed.

2. To make the filling, mix together the ground pork or shrimp, onion, garlic, ginger and green onion in a bowl. Add the cornstarch mixture and season with salt and pepper to taste.

3. To assemble the wontons, place 1 tablespoon of filling in the center of each wrapper. Moisten the edges of the wrapper with water then fold over to form a triangle shape. Press down on the edges to seal well. Repeat with remaining filling and wrappers.

4. Bring a pot of water to a boil then add the wontons. Cook for 3-5 minutes until they float to the top then remove from heat.

Serve immediately with some chopped scallions.
