1. Combine the sushi rice and water in a medium saucepan. Bring to a boil over high heat, then reduce the heat to low and simmer for 10 minutes. Remove from heat and fluff with a fork.

2. In a small bowl, whisk together the rice vinegar, sugar, and salt until the sugar and salt are dissolved. Pour this mixture over the cooked sushi rice and stir until well combined. Let cool to room temperature.

3. To assemble the sushi rolls, place one nori sheet on a work surface facing down. Wet your hands with water and spread 1/4 cup of the sushi rice evenly over the nori sheet, leaving a 1-inch border at the top. Arrange some of the avocado, cucumber, shrimp, and wasabi paste (if using) in the center of the rice. Roll up the nori sheet tightly like a cigar, using your fingers to tuck in the filling as you go. Repeat with the remaining ingredients.

4. Serve immediately with soy sauce (if using) or store in an airtight container in the fridge for later.
